This is for the part of your brain still somewhere near the water in Bali, damp-haired after a swim, watching fish come off the grill with crisp skin, chilli heat in the air and rice close enough to catch every last drop. Ikan bakar is the grilled-fish classic of seafood warungs, beachside coals and tables that know exactly what lime, sambal and sweet soy are capable of. 
 
Our crispy ikan bakar-inspired take brings that spirit home for cooler Australian nights: skin-on barramundi or snapper cooked until golden, brushed with ABC Sweet Soy Sauce, then finished with a glossy ABC Original Chilli Sauce butter rich with garlic, shallot, ginger and lime. It has the crackle, the heat, the citrus lift and enough sauce to make plain rice feel like the main event.
