Meet the Traders Bringing Big Flavour to New Adelaide Central Market
Adelaide’s favourite food playground is about to get even bigger.

The next chapter of the Adelaide Central Market is getting even bigger — and tastier.
As construction continues on the landmark $600 million Market Square redevelopment, a fresh wave of traders has just been announced. We’re talking award-winning craft beer, authentic matcha, French crepes, handmade biscuits, and South American pantry staples, all heading to what’s already one of the world’s best food markets.
Multi-award-winning Shapeshifter Brewing Co will pour locally made craft beer from its second-ever venue, while Matcha K brings authentic Japanese matcha and handcrafted desserts to the precinct.
French-style dessert specialist Crepe Bar is serving sweet and savoury crepes alongside homemade lemonade, and O’Sushi O’Bento is making a comeback after 15 years away, with dine-in and takeaway sushi and bento boxes on the menu.
Freestone Farm will deliver Riverland-grown produce, wines, and artisan pantry goods to the city, and Frantic Whisk is arriving with luxury handmade biscuits and stroopwafels.
Hummus Hustle will serve house-made hummus rooted in generations of Lebanese family recipes, Local Kitchen Co. is covering the ready-made meal brief, Poderosa has traditional South American groceries covered, and Caffe Fontana brings a specialty coffee concept from the family behind Central Market institution, Grind Roast Masters.
These names join quite the list of traders announced earlier this year. Madam Seafood is joined by Adelaide Hills chocolatier Red Cacao, and South Australian producer Rohde Egg Co. — which has been supplying eggs across the state for more than 50 years — is opening its very first retail stall.
Beyond the fresh produce and market staples, McLaren Vale favourite Never Never Distilling Co. is bringing a bar, dining and retail concept to the heart of the Market, and modern Japanese cafe Yuku Do will serve its cult-favourite sandos, onigiri and vibrant matcha drinks.
Meanwhile, Juan’s Torta Cantina is adding bold Mexican street food flavours to the mix, and familiar favourite Sushi Train is making a welcome return. Geranium Shop rounds things out with a curated edit of gifts, homewares, and lifestyle pieces.
The development goes well beyond the stalls, too. A light-filled market hall and atrium, a new laneway for outdoor dining and nightlife, rooftop green spaces, and a hotel tower rising above the precinct are all part of the vision.
When it all comes together in late 2026, the revitalised precinct is expected to draw over a million additional visitors each year, cementing it as one of Adelaide’s most vibrant corners to wander, snack, and discover something new.
