At Maybe Sammy, co-owner Stefano Catino has long championed the tiny serve. “Before Maybe Sammy even opened, I’d read about Harry’s Bar in Venice serving mini cocktails and thought, ‘no one’s done this in Australia,'” he recalls. “So we put it on our first menu — tiny serves of classics alongside reimagined forgotten recipes.”

Seven years on, it’s a signature moment, woven into the bar’s DNA: a way to enjoy multiple serves without tipping the balance, while honouring one of history’s most iconic cocktails. For this collaboration, Catino’s Tiny ‘Tini balances Grey Goose Vodka, Noilly Prat, Distillery Botanica Lemon Myrtle, and bitters — a cocktail that tastes both timeless and audacious.

Brisbane’s SK Steak & Oyster takes a different kind of brilliance. Tim Speechly, Group Bar Manager at St Alban’s Group, elevates martini craftsmanship with a fat-washed Grey Goose Vodka, Kiwami beef fat, and Ars Italica white sturgeon caviar. The result is a pristine cocktail with a whisper of umami — crisp clarity meets deep, savoury sophistication. In Melbourne, Apollo Inn’s Lachlan Bentley offers his own interpretation: Grey Goose Vodka and Vermouth Blend Mini Martini brightened with Mildura Mandarin. Citrus-forward, fresh, and flirtatiously aromatic, it’s a perfect bridge between afternoon indulgence and moody evening glamour. “Working alongside Maybe Sammy and SK on the Tiny’ Tini program has been a joy,” Bentley says. “Each bar has brought its personality to the cocktail, and yet it all feels like a conversation — one that you get to sip.”
