Mille Vini’s new CBD spot is serving up plenty of parmesan, tableside pasta theatrics and serious Amalfi Coast vibes.

This just in: your new favourite restaurant is opening in the CBD this July.

The team behind Surry Hills’ beloved Mille Vini is bringing its signature flair to Martin Place with the launch of Rovollo—a sleek new Italian restaurant and wine room set to open in just a few months.

Inspired by the hospitality and personal touches of Amalfi Coast eating, Rovollo is all about immersive dining—the kind that brings a little theatre to the table. The star of the show? A $2000 imported Parmigiano-Reggiano wheel used to toss fresh pasta tableside from a roving cart, which just so happens to be set on fire before plating.

Think perfect parmesan paired with the perfect Instagram snap.

Rovollo will take over the space that formerly housed L’uva Pasta Wine Bar, and will seat just 40 guests inside and another 30 al fresco for the kind of intimate, buzzy energy that pairs perfectly with handmade pasta and a well-poured glass of vino.

Speaking of wine, there’s an impressive list of over 250 bottles to choose from, with more than 25 available by the glass, with curated pairings and complimentary tastings also on the menu.

The minds behind the dishes include executive chef Cami Feliciano (ex-Seta, Woodcut and Matteo Downtown) and newly appointed head chef Zane Buchanan (Clam Bar), who will be serving up a rotating menu of house-made pastas, large-format proteins, premium seafood and a drool-worthy selection of antipasto.

And yes, the signature flaming pasta wheel will be a regular feature, for those who like their carbs with a side of spectacle (read: everyone).

The interiors wil match the mood: there’s a grand open kitchen, a custom marble chef’s table, luxe textures and dramatic wine displays showing off the extensive bottle list.

The goal? To create a “360-degree dining experience” where guests feel seen, indulged and inspired, according to Esper Group director Andrew Wallace.

“It’s not just about the food,” he says. “It’s about creating something unforgettable.”

Rovollo will open for lunch and dinner, six days a week. If you’re craving old-school Italian charm with modern-day fire, this is one spot you’ll want to see (and be seen).
