Consider Sydney’s love affair with seafood properly honoured. After years of anticipation, the brand new Sydney Fish Market officially opened its doors in January 2026, ushering in a new era for the city’s most iconic waterfront destination.
The market’s global appeal has already been recognised. On March 12th 2026,TIME named the new Sydney Fish Market one of the World’s Greatest Places, placing the waterfront destination alongside a curated list of the most exciting new spots to visit around the globe. The accolade celebrates not only the market’s architectural ambition and sustainability credentials, but also its role in redefining how locals and visitors experience Sydney’s seafood culture.
Sydney Fish Market Design Details
Set on the head of Blackwattle Bay in Pyrmont, this $700-million redevelopment isn’t just a facelift, it’s a complete transformation of how Sydneysiders will shop, dine, and experience the harbour.
Designed by acclaimed Danish architects 3XN, alongside local firms BVN and Aspect Studios, the market’s striking wave-like timber roof draws inspiration from the rhythm of the sea, filtering the natural light and creating a beacon on the bay. Sustainability is at its core, with 400 solar panels, natural ventilation and a foreshore promenade designed to connect locals and visitors with the water’s edge.
Where to Eat and Drink at the Sydney Fish Market
Touch Wood
Casual and inviting, Touch Wood is open from morning through evening, but if you’ve got to pick just one meal, brunch is where it really shines. Nailing the fine art of Aussie brunch culture (think beautifully scrambled eggs and perfectly whisked matcha), the venue is a standout for the caffeine crowd. There’s also a full bar if you’re looking to turn things up a notch with a mimosa – we’re all for it!
Why go: You never really need a reason for brunch so it kind of sells itself. Don’t skip the crab and xo butter crumpets, they are seriously unique!
Hamsi Tavern
Chef Somer Sivrioğlu’s Hamsi Taverna is a culinary knockout. We’d consider dining here for the aesthetics alone (seriously, it feels like a one-way ticket to Europe) but the food and drinks really stand on their own feet. Think share plates like charcoal‑grilled fish, mezze and bold Mediterranean flavours, this venue requires you to come hungry and come ready to try a little bit of everything.
Why go: Perfect for dinner with friends or a date night. Sharing plates and grilled seafood are cooked to perfection with truly memorable flavours.
Get Sashimi
For a quick and easy grab-and-go option, you really can’t go past Get Sashimi. With outposts that are already known and loved in Bondi, Coogee and Manly, having a Fish Market presence just felt right. The venue does a little bit of everything from handmade sushi rolls to expertly sliced sashimi and packed donburi bowls – big yum.
Why go: It’s a reliable, fast and delicious way to sample some seriously fresh fish without breaking the bank.
Cow and the Moon
This artisan gelateria brings its Enmore pedigree to the foreshore for a little change of scenery. Cow and the Moon serves decadent gelato flavours, seasonal twists, and refreshing granitas which make for the perfect cooldown while exploring the market.
Why go: Don’t deny yourself a post-meal sweet treat. The granita is a must-try if you haven’t before, or if you’re in a rush, you can’t go wrong with a cheeky ice cream cone on the go.
How to get to the Sydney Fish Market
Accessibility and connection have been key priorities in the redesign. The site links seamlessly to the Bays Precinct foreshore walk, light rail and a new ferry stop, making it easier than ever to reach by land or sea. It’s a development that balances modernity with heritage, honouring the previous market’s legacy while evolving it into a world-class culinary and cultural hub.
One thing is for sure, the Sydney Fish Market is already reeling in a whole new wave of seafood lovers… hook, line, and sinker.
