Set on the head of Blackwattle Bay in Pyrmont, this $700-million redevelopment isn’t just a facelift, it’s a complete transformation of how Sydneysiders will shop, dine, and experience the harbour.
Designed by acclaimed Danish architects 3XN, alongside local firms BVN and Aspect Studios, the market’s striking wave-like timber roof sets the tone for what’s to come. Drawing inspiration from the rhythm of the sea, it filters natural light across the bustling halls below and glows softly at night, creating a beacon on the bay. Sustainability is at its core, with 400 solar panels, natural ventilation and a foreshore promenade designed to connect locals and visitors with the water’s edge.
Inside, the experience promises to be as indulgent as it is immersive. The market will feature more than 40 vendors, from traditional seafood merchants to high-end eateries, cafés and bars. Among the standout names are Luke Nguyen’s Lua, a Southeast Asian seafood restaurant, Tam Jiak from Junda Khoo of Ho Jiak fame, Cow & The Moon serving up award-winning gelato and Lüneburger bakery bringing buttery pastries to the promenade. There’s even Olivetta, an artisanal olive-oil store for those who love a gourmet pantry find.
While fresh seafood remains at the heart of the experience, this new iteration goes far beyond the traditional market. Expect alfresco dining terraces overlooking the bay, a rooftop events space, and a reimagined auction floor where visitors can still catch the thrill of the morning seafood trade (just with a front-row seat and cappucino in hand).
Accessibility and connection have been key priorities in the redesign. The site links seamlessly to the Bays Precinct foreshore walk, light rail and a new ferry stop, making it easier than ever to reach by land or sea. It’s a development that balances modernity with heritage, honouring the previous market’s legacy while evolving it into a world-class culinary and cultural hub.
