Balinese-Inspired Sate Ayam with ABC Sweet Soy Sauce

Across Indonesia, sate is both everyday food and celebration food: skewered meat cooked over flame, often served with a rich sauce, sambal, rice or lontong, and plenty of fresh, crunchy sides. This version takes its cue from sate ayam, or chicken satay, with tender pieces of chicken marinated in aromatics, lime and kecap manis before hitting the grill.
As it cooks, the chicken darkens and glosses, the edges catching and caramelising while garlic, shallot, coriander and turmeric fill the air. ABC Sweet Soy Sauce brings depth, lacquered sweetness, and that unmistakable kecap manis richness, made with coconut sugar for a rounded caramel note. The peanut sauce, rich with coconut cream and lime, adds the nutty, savoury finish that makes every skewer feel complete.
Sate Ayam: smoky chicken skewers with a rich, sweet-savoury peanut sauce

Ingredients
For the chicken
500g chicken thigh fillets, cut into bite-sized pieces
4 French shallots, peeled
3 garlic cloves, finely chopped
1/2 tsp coriander powder
1/4 tsp turmeric powder
1/2 tsp white pepper
2 tbsp ABC Sweet Soy Sauce (kecap manis)
2 tbsp soy sauce
1 tsp lime juice
1 tbsp coconut oil
Bamboo skewers, soaked for 1 hour
For the peanut sauce
2 garlic cloves, finely chopped
1 tbsp coconut oil
1/2 cup peanut butter
1/4 cup coconut cream
1/2 cup water
1/4 cup ABC Sweet Soy Sauce
1/2 tsp salt
2 tbsp lime juice
1 tsp ABC Original Chilli Sauce, optional
To serve
Cooked jasmine rice
Fried shallots
Prawn crackers
Sliced cucumber
Lime wedges
ABC Original Chilli Sauce (sambal)
Method
1. Make the spice paste
Add the shallots, garlic, coriander, turmeric and white pepper to a small food processor and blend until smooth.
2. Cook the paste
Heat the coconut oil in a small pan over medium heat. Add the spice paste and cook for 2 to 3 minutes, stirring continuously, until fragrant. Remove from the heat and allow to cool slightly.
3. Marinate the chicken
In a medium bowl, combine the chicken, soy sauce, ABC Sweet Soy Sauce, lime juice and the cooled spice paste. Mix well so every piece is coated. Cover and marinate for at least 20 minutes, or overnight if time allows.
4. Skewer and grill
Thread the chicken onto the soaked skewers. Preheat a grill pan, barbecue or hibachi over high heat. Cook for 8 to 10 minutes, turning regularly, until the chicken is cooked through and caramelised at the edges. Brush with a little extra marinade as it cooks for a glossy finish.
5. Make the peanut sauce
Place a small saucepan over low heat. Add the coconut oil and garlic, and cook for 1 minute until fragrant. Stir in the peanut butter, coconut cream, water, ABC Sweet Soy Sauce, salt, lime juice and ABC Original Chilli Sauce, if using. Cook gently, stirring continuously, until smooth and lightly thickened.
6. Serve
Arrange the skewers on a platter with the warm peanut sauce alongside. Serve with jasmine rice, prawn crackers, sliced cucumber, lime wedges, fried shallots and extra sambal.
