The Best New Bars in Brisbane: December

Death & Co

The intimate space underneath the Regatta Hotel has been reimagined into a moody space reminiscent of Death & Co’s NYC, LA, Denver & Washington D.C. drinking destinations.

The freshly appointed bar and venue managers have travelled to the States to immerse themselves in the venue’s culture and service philosophy, ensuring that the signature cocktails that made Death & Co a household name are a guaranteed hit once they reach Aussie shores. They’ve also made use of local ingredients whilst retaining Death & Co’s signature touch. Opt for one of their famed creations like the Naked & Famous or Oaxaca Old Fashioned, or lean into the custom Dealers Choice cocktail — a collaboration between you and the bartender.

As for food, you’re in for a treat. Snacky favourites like truffle popcorn and blistered shishito peppers are up for grabs, alongside larger plates like the lamb burger. Don’t leave without an Uncle Wes’ Drunken Cookie — a gooey, choc chip confection laced with banana liqueur.

You can also look forward to regular live music, including plenty of jazz!

27 South Brewing

I27 South Brewing first permanent taproom is everything we hoped for. They’ve got a bunch of brews on tap rotation, including favourites Daisy Chain Hazy Pale, Crack the Sky Modern IPA and Sunsets Lager.

The relaxed taproom features a bright, coastal palette in classic industrial style, with tanks full of the good stuff surrounding the space. Keep your eyes peeled for more to come as the team sets to expand their offering.

Ruby’s Wine Shop

Ruby’s Wine Shop

Born from a love of sustainable, minimal intervention wines, Ruby’s Wine Shop is a petite 20-seat space designed to replicate the curated atmosphere of Swiss neighbourhood wine shops. Helmed by former emergency nurse Tamara Husler and her border collie Ruby, the warm, local vibe is palpable. The shop stocks over 100 drops, with six available by the glass daily, and encourages guests to BYO nibbles or stock up from local eateries like nearby Olive & Thyme. Oh, and puppers are more than welcome!

Doughcraft Lane

From the masterminds of Italian favourite Doughcraft, comes this hidden laneway bar, bringing the city to life under a canopy of orange umbrellas. A place to indulge in a summer spritz and pizza, or dance the night away at one of Doughcraft’s hosted events and epic parties, it’s best to keep an eye on Doughcraft Lane’s socials to stay up to date with what’s next.

Winnifred’s

Tucked quietly away down Arthur Street is a chic new champagne bar that will sweep you off your feet. With an extensive selection of around 14,000 bottles and a unique list of over 360 cuvées from 63 growers and Grande Marque houses (this translates to “great brand” or “great house”, inferring large, prestigious Champagne producers).

What truly captured our hearts is Winnifred’s intimate bistro, tucked behind the stunning entrance. With earthen-hued finishes and rounded edges, thoughtful lighting and ultra-comfortable booth seating, this is the place to wine and dine.

The bistro menu has been curated by Executive Chef Antoine Potier (formerly of Restaurant Dan Arnold and Ecco, two of Brisbane’s most renowned fine dining destinations). Each dish on the menu was created to tell a story inspired by its French origins.

If you’re stopping by for a quick sip and snack at Winnifred’s, take a seat in the Coteaux du Petit Morin (Champagne garden) at the entrance, or at the stunning emerald-green marbled Vallee de la Marne (the eighteen-seat Champagne bar and cellar).

Dark Blue

One of our (and Brisbane’s) favourite wine bars has just opened doors on a cocktail bar in another of Fortitude Valley’s laneways. This Heritage-listed space seats thirty, and is in the capable hands of bar manager Charlie Hunter (ex-Savile Row), while Ellery Low (ex-Maker) steps in to support Dark Red as owner Hannah splits her time between the two.

Hannah has fostered a devoted blend of regulars and intrigued newbies to her Italian-varietal-focused wine bar, and we expect no different when it comes to this progressive new cocktail bar, Dark Blue.

5a Winn Lane, Fortitude Valley

Palais

Cloudland’s mezzanine level has just soared to new heights of elegance, with a plush new refresh that will transport your evenings to a world of indulgence. Palais is a late-night escape where music, glamour, and good times are guaranteed.

Timber panelling, plush furnishings and marble accents surround the stunning visual centrepiece of the bar, where you can sip on eclectic creations like the Ruby Rendezvous (bourbon, dark chocolate, black walnut, beetroot, finished with a gold-leaf beetroot chip). The bar itself is entirely circular and adorned with thousands of crystal spheres. The bespoke circular DJ booth houses local DJs, who’ll spin vinyl, blending groove, jazz and disco amongst underground hits with beats you can’t resist.

Wild Legs

This laidback, walk-in only wine bar is just the ticket for a slow Saturday afternoon. The wine list revolves around natural, organic and biodynamic wines and the food menu is equally impressive. Think snacks to linger over — charcuterie, mortadella brioche, oysters, and stracciatella with roasted pineapple
