The Convent Hunter Valley
The backstory alone is worth the visit. Built in 1909 in Coonamble and originally serving as a Roman Catholic convent and boarding school for 70 years, The Convent was rescued from demolition in 1990 and transported in sections 600km east to its current home at the end of Halls Road in Pokolbin — where it was painstakingly reconstructed and reimagined into the 19-room luxury boutique hotel it is today. The result is one of the Hunter’s most charming and unique stays, with heritage-high ceilings, vintage furnishings and wraparound verandas overlooking manicured gardens and the vineyards beyond. The estate also plays host to the hatted Circa 1876, one of the Hunter’s most celebrated dining experiences, as well as complimentary tastings at Pepper Tree Winery for in-house guests. Elysia Wellness Retreat
