Paddy’s Markets has received a very foodie-focused makeover, and it may just be Sydney’s newest foodie hotspot.

Hay St Market is bringing a new era of food and market culture to Sydney, offering visitors the chance to eat, drink, shop and play from morning til late, seven days a week.

Paddy’s Markets is no doubt a Sydney tourist staple, offering trinkets, knick-knacks and souvenirs of all shapes and sizes, and this multi-million dollar makeover—more than three years in the making—has refreshed and revived the space, offering the public a chance to taste a twist on tradition and experience the cultural diversity of Sydney.

With over 48 traders and over 25 cuisines all under one roof in the heart of Haymarket, Hay St Market brings together street food, artisanal eats, florals, seasonal produce and specialty retail for an unforgettable and unique experience.

Here’s what to expect at the brand new dining destination.

A Clash of Culinary Icons

Not just your average food market, world-renowned chefs, culinary icons and artisanal traders who are true masters of their craft have infused Hay St Market with their passion, flair and expertise.

Celebrated chef, restaurateur, author and TV presenter Luke Nguyen brings his father’s closely guarded Pho recipe with its famous 24-hour broth to Pho Chu Lap. You can also try his epic Singapore Chilli Crab and Laksa dumplings at Luke Luk Dumplings, or experience his take on traditional Banh Mi at Madam Banh Mi. A tender braised wagyu beef brisket on a crunchy baguette with traditional trimmings, dunked into a bright fresh salsa? We’ll take two.

Australian Indigenous chef, TV personality and restaurateur Mark Olive also fires up the grill at Little Midden, and serves up Indigenous flavours with a seafood repertoire. The sensational Smoked Blue Gum Barramundi and Bell Pepper skewers, seasoned with a touch of Salt Buch and Pepper Berry are a must-try.

Tim Casey, a specialist butcher with over 50 years experience, including as former Head Butcher at Rockpool, brings his expertise to Love Me Tender, the go-to place to find a premium selection of high-quality meats. From beef cheeks and rib eye cutlets, to brisket patties and succulent lamb, each cut is chosen for its exceptional flavour and tenderness.

Fancy some fromage? Cheesemonger Christina Murphy, who honed her craft in the finest fromageries in Paris, curates The Cheese Table, offering up a selection of cheeses and accompaniments from around the globe. There’s also a daily cheese toastie on offer, made with freshly baked sourdough.

And if fresh produce is on your shopping list, Frank Canturi of The Signorelli Bros has the best local and seasonal offerings. With over 70 years in the business, the selection is handpicked daily and aligned with the changing seasons to ensure every bite is bursting with flavour.

A Food Tour of the World

As well as showcasing the best produce and brightest Aussie food talent, Hay St Market celebrates Australia’s melting pot of cultures, offering a taste of the world under one roof.

Cannolis are piped to order and coffee is served hot at Baggio Coffee and Cannoli, while El Mercado Spanish Deli serves up the finest Losada olives, 25-year-old aged Pedro Ximenéz vinegars and Don Bocarte Cantabric Anchovies.

Taste the traditions of Greece at Nico’s Cypriot Chargrill, featuring house-made Sheftalies and crispy Loukamades drizzled with lavender honey, cinnamon or a miso butterscotch sauce, or be first in the line to grab The Pie Guy by Broomfields’ sell-out 11 hour smoked BBQ Beef Brisket pie.

A dedicated sushi and sashimi section, an oyster bar, a live filleting station and an array of fresh prawns can be found at The Fish Co, and tortillas made using the traditional nixtamal technique are served alongside authentic Mexican flavours and unique salsa at Taco Nixtamal.

If that wasn’t enough, there are also vendors showcasing Middle Eastern favourites, burgers, pastries, seasonal and fresh salads and specialty roasted coffee.

If exploring the 3,000 square metre space has you thirsty, its a good thing Hay St Market is the city’s first fully licensed market. Check out Cans & Crates, which features over 180 canned drinks from around the world, or step back in time at Traders Bar to enjoy a nostalgic cocktail, craft brew or a glass of regional wine.
