A New Dining Destination is About to Open in the Rocks
Three new stunning venues are about to open as part of new hospitality precinct, The Collective.
This Friday, a brand new hospitality precinct will launch in The Rocks, blending the timeless charm of the heritage-rich district with contemporary dining and drinking experiences.
The Collective has a vast footprint of 1,800 square metres, and combines established icons like Saké and The Cut Bar & Grill with three brand new venues: The Dining Room, The Garden, and Tailor Room.
Led by a trio of acclaimed chefs, The Dining Room offers a quiet sense of drama, with a menu that showcases premium produce. Start with snacks like a caviar tartlet or baby abalone schnitzel served with native citrus mayonnaise, before moving to the seafood bar where the ocean’s finest is on full display. From Moreton Bay Bugs served chilled with horseradish ketchup to seafood towers and three types of caviar, diners are spoiled for choice. For meat-eaters, the Berkshire pork chop, grilled to form a golden crust and served atop housemade hot mustard and burnt celeriac purée, is a stand out, while the 1.5kg Wagyu MB9+ tomahawk serves as a delicious table centrepiece. The menu is complimented by curated wine list led by a predominately female sommelier team, and cocktails that shift with the seasons.

The Garden is an alfresco oasis frame by heritage-listed buildings, providing a relaxed yet refined setting for all-day dining. Cosy dining nooks are tucked between olive trees, Xanthorrhoeas and shrubs and perennials, offering a serene retreat for breakfast and lunch. Transforming into a lively social hub beneath the stars as night falls, with the mood shifting from casual to considered and the full a la carte menu from The Dining Room available.
An intimate, 20-seat cocktail bar in just 24 square metres of space, Tailor Room is a innovative and unforgettable new bar experience. The first cocktail collection, Textures, pays homage to the space’s textile and wool past, with the ten signature cocktails on the menu inspired by different fabric. Silk is a showcase of smoothness, blending gin with coconut and rose geranium and a whisper of sandalwood, whereas Denim is a tall, fizzy cocktail with a hue mirroring the fabric’s iconic tint. Think a twist of ginger and bergamot with a golden shimmer garnish that is a clever nod to denim’s signature stitching.
The Collective is a lively destination that caters to both relaxed mornings and bustling evenings, and all the delicious moments in between, and breathes new life into heritage spaces.
