After a multimillion-dollar transformation, the historic Milton Park estate returns as Ardour Milton Park Bowral, blending heritage charm with contemporary luxury.
The Southern Highlands has always been Sydney’s go-to for a restorative weekend away; all crisp country air, cellar doors and cosy firesides. Now Ardour Milton Park Bowral (formerly Milton Park Country House Hotel & Spa) is stepping confidently into a new chapter that really cements Bowral as a must-visit destination for burnt out city slickers.
Set across 120 hectares of rolling woodland, the estate pairs grand, old-world architecture with thoughtfully refreshed interiors. Think tree-lined strolls, oversized suites made for switching off, and elegant lounges that practically insist on a second glass of red.
Reopened in February 2026, this storied retreat feels reawakened, blending heritage romance with a more polished, contemporary take on regional luxury, all just 90 minutes from the CBD.
Ardour Milton Park Bowral Dining
At the centre of the estate’s glow-up is Horderns Restaurant, now settled into a light-filled dining room overlooking manicured gardens. Executive chef Mark Holland (ex-Nomad, Paddington Inn, UK) is steering the menu in a pan-European direction, heroing seasonal local produce and dishes designed to be shared. Expect elegant small plates, generous centrepieces and a little tableside theatre, with Southern Highlands standouts like Snake Creek Beef and Pecora Dairy woven throughout.
Next door, The Polo Bar has had its own renaissance. It’s now an all-day kind of place, where you can drop in for a classic cocktail and a grazing plate or linger over a beautifully curated charcuterie selection spotlighting artisan producers from the region. The venue actually has a dedicated charcuterie room, so if you’re a fan of sliced meats and cheeses then you’re in the right place.
High tea, of course, remains a signature ritual, but it’s been dialled up with seasonal local touches and a distinctly Highlands spin. Add in the refreshed interiors, sweeping terraces and those famously romantic gardens, and Ardour Milton Park feels less like a hotel stay and more like a real-life opportunity to live out our Bridgerton fantasies.
