The new wine bar has taken over the former Stem Restaurant site on Hindley Street, led by acclaimed sommelier Henry Brampton and Lorenzo Di Pasquo. Canopy promises high-quality wine without the stuffiness, with rare international drops, boutique local wines and half-bottle pours for easy sipping and tasting.
