Christmas Leftovers: Mitch’s Midnight Ham Toastie Recipe

With Christmas just around the corner, we’re preparing ourselves for a feast to end all feasts. If you’re like us, and cannot wait for the onslaught of leftover salads, desserts and Christmas meats, this recipe is one for you. 

And so, to help you get creative with your leftovers, Head Chef of Rick Stein at Bannisters Port Stephens Mitchell Turner has gifted us with a tasty sandwich recipe that will elevate your toastie game.

Ingredients


4 x thin slicesof Christmas ham2 x slices goodsourdoughMayonnaise – totasteSauerkraut – totaste2-3 slices SwisscheeseHot Mustard –English or a bitey American mustard to tasteKnob of butter

Method


Heat a heavy-bottomed frying pan on the stove with a dash of oil to medium-high heat.Get your sandwich made, judge for yourself how much of each ingredient you want and feel free to throw some pickles on there or swap the cheese out for what’s available in your fridge.Once the sandwich is ready, drop a knob of butter in the pan, wait for it to froth and pop the toastie in.Press on the toastie to get a nice even colour and flip when you’re ready.When the bread is nice and golden on both sides and the cheese is starting to melt, take it off the heat and eat!
