Acclaimed chef Jason McQueen (ex-Quay, Aria, Bel Mondo), a Camden local with a global mindset and a serious knack for crafting flavour-forward, umami-rich dishes that are as stunning to look at as they are to eat. Think: caramelised miso Patagonian toothfish marinated for three days, and MB6+ Wagyu striploin grilled over flame — modern Australian with a Japanese-fusion twist. Dessert gets its moment too, with playful creations like “chocolate sushi” and Frangelico affogato that toe the line between art and indulgence.

But the real showstopper? The rooftop dining domes, each offering an immersive seven-course degustation Wednesday through Saturday.
