A Five-Star Resort Is Coming to the Hunter Valley
Laval Hunter Valley is set to open in 2027... and it might just be the most ambitious resort project the region has ever seen.

The Hunter Valley just got a very exciting addition to its horizon. Fresh off being named NSW’s best region for a weekend escape in the Sitchu Awards 2025, the valley is about to level up in a big way. HVL Hotels has announced the creation of Laval Hunter Valley; a landmark 65-villa luxury resort opening in the second half of 2027 on the historic 165-acre Lindeman Estate in Pokolbin. This will actually be the region’s first new-build luxury development of this scale in over two decades which is very exciting!
Each of the 65 pavilion-style villas will be set within a working vineyard, with uninterrupted views across the valley (and naturally, the chance to drink a lot of wine).
Alongside the grapes, food will also be a serious focus. Chef Justin North will lead the culinary program which is anchored by the hotel’s signature restaurant Vallery. This will be a Mediterranean-esque à la carte experience drawing on the flavours of Provence, coastal Spain, Southern Italy and Japan. Poolside, La Vida brings a Cali-Mex energy to the resort’s 25-metre red-tiled pool (hello margaritas), while the Lobby Bar handles pre-dinner drinks and everything in between. A 10,000-bottle cellar and 1,000-strong wine list will also make sure guests are sufficiently watered throughout their stay.
The wellness offering, Veraia Spa will spans 1,000 square metres and be spread across two levels. Inside, there’s set to be 15 treatment rooms, thermal circuits and longevity-led therapies described as medical-grade and largely unseen in Australia to date… colour us intrigued. Outside, meditation meadows, yoga platforms and sensory gardens extend the experience into the landscape.
Laval will also house one of the world’s largest collections of Gillie & Marc sculptures, with 13 major works across the grounds and over 130 in-room pieces — anchored by a monumental bronze installation beneath a 175-year-old fig tree.
