For one weekend only, Ace Hotel Sydney is being transformed into an enchanting Scottish Highlands-inspired world where guests are invited to forage through mossy landscapes, uncover hidden drams and follow a sensory trail that blurs the line between cocktail experience and immersive theatre.
Created to celebrate 200 years of The Glendronach, An Ode to The Highlands unfolds across a series of whimsical, multi-sensory chapters inspired by the rugged beauty of Scotland. Wander through atmospheric soundscapes, discover secret whisky tastings hidden amongst foliage and natural textures, explore an immersive fragrance experience by Scottish scent house Jorum Studio and enjoy unexpected food pairings designed to bring each chapter to life.
Even if whisky isn’t usually your drink of choice, the experience alone is well worth your evening. It feels like stepping inside a storybook. One moment you’re foraging through a Highland landscape in search of your next dram, the next you’re discovering whisky-infused chocolate or settling in for a beautifully crafted single malt paired with smoked jersey curd, charred beetroot or scorched bonito, all guided by Ace Hotel Sydney’s Culinary Director Isobel Whelan-Little.
The experience concludes at Highlands House, a hidden bar where guests can linger over signature cocktails and elevated snacks, extending the magic into the wee hours.
