Sydney’s First Luxury 25hours Hotel to Open in Paddington This Year
Bold, cheeky and brimming with character, Paddington’s newest hotel is set to be your favourite place to check in (or just hang out).
In case you missed it, Oxford Street is getting its groove back — and the arrival of 25hours Hotel The Olympia later this year is set to take things up a notch.
The first Australian venture for cult European hotel brand 25hours (known globally for their maximalist interiors, irreverent energy and creative hospitality offerings), is reportedly opening its doors in Sydney’s Paddington this spring.
We can expect the chain’s signature playfulness to be brought to life through interiors decked out in mood-lifting colours, textural layers and a vibrant energy fuelled by standout food and drink offerings that still feel distinctly, and delightfully, Paddington.
Rooms With a Distinct Point of View
25hours Hotel The Olympia will feature 109 guest rooms, including three themed concept suites, all designed around two iconic movie character types: The Dreamer and The Renegade, giving each room its own quiet sense of theatre.
To top it off, every room will showcase exclusive artwork by Sydney-based artist Kubi Vasak, adding a truly local and creative edge to the guest experience.
There’ll also be two meeting spaces, with the largest accommodating up to 150 people — ideal for events, launches or stylish inner-East gatherings.

Paddington’s New Dining Destination
The best part about this new hotel offering? It comes with four distinctive hospitality venues, each designed to feel like its own must-visit dining destination.
Jacob the Angel, on the hotel’s ground floor, is a specialist coffee house that’s part eatery, part bakery, and all charm. Whether you’re wandering in from Oxford Street or staying the night, this is your go-to for pastries, caffeine and easygoing vibes.
The Palomar brings diners on a rich culinary journey through Southern Spain, North Africa and the Levant. With an open kitchen and inviting interiors, it’s all about warm hospitality and bold flavours in a high-energy yet low-fuss setting.
Then there’s The Mulwray — a cocktail and wine bar designed with intimacy and nostalgia in mind. Named after Evelyn Mulwray of the 1974 film Chinatown, it brings old-school cool with a fresh twist, curating a drinks list that’s classic but never predictable.
And up on the roof? Monica — a lush all-day rooftop oasis that channels 1960s Hollywood glamour with a modern Sydney twist. Expect stunning views, good vibes and the kind of golden-hour moments that stretch long into the night.
An All-Star Team
Of course, it’s not just the outward appearances that have us excited: there’s also a powerhouse team helping to bring this bold vision to life behind the scenes.
General Manager Jeremy Colahan will lead a 130-strong team while drawing from over 15 years of hospitality experience, including roles at Hotel X and W Brisbane.
His goal? To create a space that feels electric from the moment you walk in and one that becomes a lasting part of Paddington’s local scene.
Heading up the culinary side is celebrated chef Mitch Orr, who takes on the role of Culinary Director across all of the hotel’s venues.
Orr joins from his recent post at Kiln, where he made a name for himself with live fire cooking — an elemental approach he’ll continue at The Palomar. Known for pushing boundaries, Orr brings a confident, local edge that will shape The Olympia’s food identity from the day doors open.
Just Like Home (But Way Cooler)
With its eclectic spaces, distinct storytelling, and dynamic food and drink offering, 25hours Hotel The Olympia is set to become the place to be in the heart of Paddington.
Trust us — come spring, you’ll want to be there.
Whether you’re staying overnight, grabbing a morning pastry or heading straight to the rooftop, this is the kind of place that turns locals into regulars and guests into loyal fans.
