A Spring Fling for Foodies: 10 Delicious Reasons to Savour The Tweed

A spring feast of Tweed’s landscapes, flavours, stories and unforgettable gatherings.

This year, we’ve partnered with Tweed Tourism Company to celebrate Savour The Tweed — a five-day culinary festival in late October that showcases the region’s rich produce, acclaimed chefs and unforgettable experiences.

The Tweed in spring is a sensory banquet: fields of emerald cane rustling in the breeze, waves tumbling against golden beaches, and hinterland valleys heavy with tropical fruit. Here, volcanic soils and ocean spray conspire to produce flavours that are as bold as the landscapes themselves. From 22nd to 26th October, this fertile corner of Northern NSW becomes the stage for Savour The Tweed, a five-day culinary festival where flavour, culture and spectacle collide.

Curated by Christine Manfield and Amy Colli, the program champions provenance with more than 35 events spread across distilleries, orchards, beaches, galleries and paddocks. Celebrity chefs (Mindy Woods, Frank Camorra, Martin Boetz, Belinda Jeffery) meet The Tweed’s grassroots growers and makers, proving this region doesn’t just keep pace with Australia’s food scene — it leads it.

Fire & Forage

Festoon lights lead you into a macadamia orchard where open flames roar and chefs weave alchemy from smoke. Wal Foster, Augustin Gonzalez and Armando Enríquez Icaza char wild game, seafood and farm produce into dishes that crackle with fire-kissed flavour. You sit at long communal tables under starlight, sipping local tipples as smoke curls skyward. Dessert is wild fruit ice cream churned on the spot — tart, sweet, unforgettable. This feast is primal dining reimagined, as soulful as it is spectacular.

Pasture to Plate: An Artisan Pasta Evening

At Woodland Valley Farm, twilight settles over rolling paddocks as a glass of Prosecco finds its way into your hand. Watch as golden-yolked eggs become silky sheets of pasta in a live demo, before you sit beneath festoon lights for a two-course Italian feast. Plates arrive steaming with handmade pasta, followed by a decadent dessert of velvety zabaglione, each paired with boutique wines. The farm hums with hens and laughter, and the air smells faintly of hay and simmering sauce. This artisan feast is rustic romance, carb-loaded and utterly unforgettable.

The Natural World: Terroir & Taste

Wine with a conscience. At Burringbar’s Natural Wine Shop & Bar, sommelier Bron Harrison pours drops from Indigenous and artisan winemakers, each glass a story of land and culture. Chef Daniela Maiorano layers Mediterranean small plates — marinated olives, ribbons of prosciutto, and creamy local cheese — to amplify the flavours. Between sips, you’ll hear how soil, climate and tradition shape a bottle’s soul. This tasting is less a flight, more a philosophy: wine as heritage, poured with care.

Kick things off at Murwillumbah’s heritage railway station, where brunch takes centre stage under high timber beams and iron girders. Acoustic melodies float across the tracks, lending an old-world charm that makes every bite taste brighter. Afterwards, wander or cycle along the Northern Rivers Rail Trail — if only to justify that second croissant. This sunlit brunch is community, culture and croissants in one irresistible package.

Holistic nourishment gets the spotlight at Husk Farm Distillery, where Le Cordon Bleu chef-nutritionist Samantha Gowing proves wellness can taste wickedly good. After a guided garden stroll, watch Samantha transform farm produce into dishes bursting with colour and vitality. Think vibrant herbs, sprightly greens, a zesty citrus dressing — each plate a little ode to health. Of course, this is Husk, so a botanical gin cocktail appears like a tonic for the soul. This masterclass is part cooking lesson, part wellness retreat.

Sugarcane country has its own poetry: golden stalks swaying in the breeze, molasses bubbling into dark caramel rivers. At the Condong Sugar Mill, generations of farming stories come alive before you step into the world of craft rum. Boutique distillers Birds of Isle lead a tasting that swings from silky white to spiced amber, teaching you how terroir shapes a spirit. Stir, shake and sip your own cocktail, matched with clever chef-made bar snacks. Cane Country is history and happy hour with a sweet Tweed twist.

Cheesemaker Kat Harvey unveils four unique creations, each matched with a local craft beer by brewer Nick Loeve, the pairing surprising and spot-on. All the while, ceramicist Leia Sherblom works the pottery wheel beside you, clay spinning under her hands, plates forming in real time. It’s sensory theatre: the funk of brie, the fizz of beer, the rhythm of wheel and clay. This Savour The Tweed event sends you home happy, full, and clutching your very own ceramic keepsake.

The finale unfolds on the sweeping lawns of Plantation House, with the Tweed caldera as a cinematic backdrop. DJs set the tempo as families sprawl on picnic rugs, kids dart between games, and grown-ups dance under fig trees. As the sun sets, the air is thick with music, flavour and joy. This closing celebration is the festival distilled into one glorious day.
