Healthy Recipes: Bar Tikram’s Fattoush Salad

Fresh, easy to make and full of flavour

As we are staying indoors and cooking more, we have some fresh foodie inspiration to take your lunch or dinner to the next level. Dany Karam, Executive Chef at Bar Tikram, has shared his Fattoush Salad recipe, for fans of Middle Eastern fare to recreate at home.

This Fattoush Salad is a Middle Eastern favourite; fresh, easy to make and full of flavour. Perfect to accompany any protein, or be a hero dish in its own right, this salad is a healthy option for dining at home.

Ingredients


Serves: 2 – 4 (depending on serving as side dish or main)

Preparation time:  30 minutes

Salad

4 x tomatoes  ½ cucumber2 x cos lettuce bunch 1 x spring onion1 x capsicum 1 x shallot2 x radish sliced 1 x pomegranate to garnish Parsley to garnish2 slices of pita bread to serve

Dressing

1 gr crushed garlic8 gr salt40 ml olive oil10 ml vinegar170 ml lemon juice25 ml of water15 ml pomegranate molasses3 gr Sumac

Method


Cut the tomatoes in half then in 3Pick the cos lettuce leaves, clean, wash and then chop themThinly slice the cucumber, capsicum, shallot, spring onion and radishPlace all chopped salad ingredients in a bowl and set asideStart on the dressing by dissolving the salt into the lemon juiceOnce dissolved add the pomegranate molasses, and olive oilPrepare the pita bread by cutting it into thin strips and deep frying it at 175°C until golden brown colourSeason with salt and get ready to build the saladCombine the salad ingredients with the pita bread in the bowl (leave a handful of pita bread aside), and stir through the dressingGarnish with fresh pomegranate, parsley and leftover pita bread
