Head Chef Connor Hartley-Simpson's menu champions local produce as well as cooking methods that have stood the test of time - from pickling and fermenting to wood-fire and charcoal. You can expect to see dry-aged swordfish cooking over the fire before being caramelised on the hot grill whilst leek tops are charred in the Josper.
