In the foodie world, winter signals the start of truffle season. The culinary treasures are one of the most expensive ingredients on earth, retailing for around $2,000 a kilo – but and from mid-June to August, our chefs give us a taste. This year, they’re adding truffle twists to their menus, and creating new plates that put the fungi front and centre.

Here are the best and bougiest places to dine this truffle season in Sydney.

One of our favourite Italian diners in Surry Hills is pulling out all the stops for the end of truffle season. With Manjimup truffle on hand to decorate the delicious dishes expect zucchini flowers stuffed with truffle pecorino and doused in blossom honey, burrata and stracciatella, mushroom and truffle stuffed ravioli with sage and walnut infused butter and even a white chocolate and rum tiramisu topped with freshly shaved truffles. A rich, velvety taste – this is the perfect farewell to truffle season. Head here to book.

A true gem on the Upper North Shore dining scene, the Goodfields truffle menu is legendary. Walk-in only, the truffle menu is known to draw a crowd with people flocking in to try out the six limited edition truffle dishes. Opt for a decadent savoury truffle doughnut with cheesy mushroom filling, hazelnuts and topped with truffle pecorino and freshly shaved Australian truffle, chicken truffle hotcakes with whipped butter and truffle infused maple syrup makes for a perfect wintery breakfast-slash-hangover cure. The croissant loaf jaffle with confit portobello mushrooms and truffle cheese sauce is topped with with fresh herbs, hazelnut and truffle topped with a gooey fried egg, potato gems topped with lobster tail and wagyu beef bits make for the ultimate high brow-low brow snack. Honestly, each of these dishes are more mouth watering than the last so don’t miss out!

SOUL Dining and SOUL Deli

Husband and wife duo Illa Kim and Daero Lee know their truffles, having been truffle hunting on the Robertson Truffles farm in the NSW Southern Highlands, these dishes are inspired by the unique truffle dishes. With inventive takes on Korean cuisine, SOUL Deli has a stepped up take on breakfast classics, truffle egg bread – a take on Gyeran-bbang with a yolk in the middle of the bread, truffle egg benedict, warming truffle chicken porridge, and sweet truffle choux with cream and a cookie crust. Down the road, SOUL Dining is showcasing a special truffle tasting menu with truffle wagyu tartare, truffle and sea urchin with thick house-made noodles and broth and Korean dumplings topped with truffles. There will also be five unique truffle infused cocktails which is a truly unique experience.

Sweet Belem

On weekends during winter, our favourite bakery and home of the best Portuguese tarts this side of Lisbon, will be serving three truffled treats in a collaboration with chef Jacqueline Ektoros. The famous tarts will be made with truffled free-range eggs and topped with a marbled slice of black truffle. The same truffled egg custard will also be popped into their vanilla slice and brioche doughnuts will be piped full of truffled crème pâtissière and dusted with rich truffle shavings. We can’t wait to try this one.

This July, Salt Meats Cheese is serving up a limited-edition truffle-infused menu, celebrating the lush umami flavour. The limited menu starts with baked truffle brie topped with freshly shaved truffle, truffle arancini perfect for a cheese pull and mains of gnocchi cacio e pepe topped with fresh truffle, house-made egg pappardelle with clarified butter, truffle and parmesan and, of course, a truffle mushroom pizza. Or, if none of these take your fancy, add freshly shaved truffle or truffle cream to any menu item.

With a dedicated truffle menu, Devon has pages (plural!) of truffle treats. Start with a truffle gianduja latte and then move into exciting elevated snacks including Wagyu korokke with rich Wagyu mince, mashed potato, panko crumbs and fresh truffle or truffle curly fries topped with gratings of salted egg yolk and cheese. A lunchtime sando with Wagyu katsu, Devon secret sauce and caramelized onion or an oozy croque madame with LP’s mortadella with egg yolk, shallots and portobello mushrooms won’t ever go astray. Asian fusion dishes include truffle don with sliced 9+ Wagyu, onsen egg, seasoned nori, tobiko and fresh truffle lashing and slurp-inducing mie goreng with mushrooms, chicharron, fried egg and more. Sweet treats include truffle ricotta hotcake with soft serve or a sundae with truffle honey and fresh sea salt that would have earned Elvis’ approval.

Nothing better than a bougie brunch, every Sunday during truffle season, NOMAD is serving up an a la carte brunch where each dish is served with two grams of Manjimup WA black truffle. Consider, a three cheese maoush, bakeg eggs with wood roast tomato, wood roasted mushrooms with Jerusalem artichokes and an ice cream sandwich dessert with olive oil ice cream topped and tailed with pecan cookies.
